Job Purpose:Enhances buffet tables by designing, preparing, and maintaining artistic food presentations; carving meats; providing ice sculptures.Duties: * Designs food presentations by reviewing advance menus; determining amount and type of food to be served; confirming theme and decor to be followed. * Plans food preparation and decoration by conferring with customers; reviewing customer specifications, designated color scheme, and theme. * Provides specialty foods for buffet by preparing hot and cold hors d'oeuvres, cold whole salmon, roast suckling pig, fancy aspics; designing presentation and artistic garnishes. * Designs food accompaniments by molding butter into artistic forms; presenting a variety of sauces. * Adds decoration to the buffet table by sculpturing blocks of ice into theme-oriented figures. * Serves diners by carving meats in patrons presence; adding sauces, gravies, and garnishes. * Maintains safe, secure, and healthy work environment by following and enforcing food preparation standards and procedures; complying with legal regulations. * Improves quality results by studying, evaluating, and re-designing processes; implementing changes. * Maintains customer confidence and satisfaction by responding to their requests; informing them of needed food and/or ingredient changes; maintaining a consultative relationship. * Updates job knowledge by participating in educational opportunities; reading professional publications; keeping abreast of dining trends; maintaining personal networks; participating in professional organizations. * Enhances organization reputation by accepting ownership for accomplishing new and different requests; exploring opportunities to add value to job accomplishments.Skills/Qualifications:Food Sanitation, Creativity, Attention to Detail, General Consulting Skills, Customer Focus, Basic Safety, Job Knowledge, Flexibility, Handles Pressure, Planning, Verbal Communication
